Young chef Martina Caruso was born and raised at Signum, and after gaining formative experience elsewhere, decided to return home to personally take charge of the kitchen. Today she leads a brigade of nine, while her brother Luca manages the enchanting hotel built in the style of a typical Aeolian village. Martina knows how to make the best use of the vibrant products from her land, her garden, and the sea; she doesn’t deny their power, skillfully playing – with lightness and creativity – even with the intense salinity of certain ingredients, not masking it but enhancing it. Luca and cousin Raffaele perfect the gourmet experience with exceptional wines (some from their own production), also available by the glass, and excellent cocktails. Three tasting menus of 6, 7, and 9 courses are offered.
